Who's in?
I found a Winter Ultimate League! Its pretty short and doesn't start for a couple months (February 4-March 11) and it costs $65, but you get a disc and probably a t-shirt. Games are on Thursdays at 7:00 pm....so I'm not sure how that works with people's school stuff. However, it's based at DU. Anyway... we should all join.

Delicious mouth watering crepes w/
tasty eggs and scrumptious breakfast meat!
Items needed still for the Breakfast menu to be complete are the following:
1. Orange Juice
2. whatever else anyone wants to contribute..
Rules of engagement upon arriving to the big brunch are:
1. Must wear your Pj's (and for those of you who don't wear anything to bed, at least bring something of your own to sit on, hee hee), I have dibs on Maia's snaggy already...
2. We must pick a movie to watch together so please, send out some ideas....Maia was thinking Breakfast Club....any takers here, just blog it and we shall tally it up.
3. We hope this works for everyone and look forward to some great food and even greater company!!!

Hey there peeps. I was wondering what the next menu will be? I am down to bring stuff if needed, just let me know.
On to current news: Saturday was rather quite uncertain, the weather could not make up its mind and neither could I. Finally, with the help of letting go and live and let live mantra, I ended up attending a meeting the of the GURUS that my internship supervisor put on and took my uncle with me as well. I ventured off and had a great burger down on vine street, stuffed my face and heard some really great stories from my uncle as well. Then it was time to cruz on back to the airport where I wished my uncle safe travels. I missed him, honestly. He was happy to have made it and was also lookning forward to going back and fishing on Sunday, ha!
Which brings me to today. I stayed up with a friend of mine and talked the night away. I woke up and wanted to go clean and go shopping, so I set aside my work out clothes, cleaned, posted a my journal entry and then set out with Ali to run errands, yea! I love gift cards, I love points that one accumulates with a credit card which enables you to purchase random stuff, I love people watching, I live ice cream even on the coldest of days and I love my new boots (I'm too sexy for my boots...) Ha!!
What do other peeps love? Please share!!

Chalupa Recipe (one of Heidi's family favorites)
Chalupa
(Can be cooked the day before on the stove and reheated in the crock pot the next day)
3-4 lbs. pork roast (cheapest shoulder or rump cut)
1 lb. dry pinto beans
4 cloves garlic
2 Tbsp ground cumin
2 tsp oregano
4 Tbsp chili powder
2 4oz. cans mild green chilies-chopped (or 1 7oz can)
1 Tbsp garlic salt (or plain salt)
Trim fat off roast. Wash beans and combine all ingredients in a large pot. Cover with water and lid, boil slow for up to 6 hours. (May need to add a little water if too much boils off.) Break up roast, remove any bones. Continue to cook uncovered on low until thickened. Serve over corn chips (Frito's) with lettuce, tomatoes, black olives, sour cream, onion and cheddar cheese.
Feeds many!

Tagging in...
If I can stop eating so much cereal at night or in the evening, I will definitely be hungry for Monday's meal. Chalupas are great, where did this dish originate, well, lets see, granted my sources are stemming from the internet and are not substantiated I still found some relatively interesting notes about chalupas...here goes:
1. A chalupa is a tostada platter in Mexican cuisine. It is a specialty of south-central Mexico, such as the states of Puebla, Guerrero andOaxaca. Chalupas are made by pressing a thin layer of masa dough around the outside of a small mold, and deep frying to produce crisp, shallow corn cups. These are filled with various ingredients such as shredded chicken, pork, chopped onion, chipotle pepper, red salsa, and green salsa.
2. A chalupa is usually longer than a sope, resembling the canoe-like boat that is its namesake, although there are also small versions (named chalupitas) available in other regions as appetizers or snacks
